Here are some great recipes from Karen Sherwood. She says that fall dandelion leaves are great, even if some books warn against them. I’ve tasted all these recipes and can vouch for their deliciousness.

 

Dandelion Pesto

1/4 cup parmesan cheese
2-4 cloves garlic
1/2 cup olive oil
2-3 cups fresh dandelion leaves
a dash of salt

Mix garlic, salt, and oil in a blender for 10 seconds. Gradually add leaves, blend, then do the same with the cheese. blend until an even consistency is formed. great over pasta!

Marinated Burdock Root

Thinly slice 6-8 first year burdock roots, 4 cloves of garlic, and 1 piece of ginger. sauté in a medium skillet with 1 cup water until burdock is tender. add 1 cup tamari and 1/2 cup balsamic vinegar and reheat. seal in canning jars or keep in fridge.

Acorn Muffins
2 cups proccessed acorn meal
1/4 cup nut or salad oil
1 tsp salt
1 tblsp baking powder
1/2 cup sugar or honey
1 egg
1 cup milk

Combine dry ingredients and then mix in wet ingredients until moistened. Spoon into greased muffin tin and bake 12-15 minutes at 375.
